Malaysian tofu curry & crafting for a good cause...

So I popped into etsy this afternoon to check out what's new. I found that the lovely folks at craft revolution have set up a shop to sell items donated by kindhearted crafters who want to help out with the red cross emergency relief fund. I immediately snatched up the "Crafty swag" set donated by Leah at craftster. The esty shop is full of items in need of new homes & there are thousands of people who are very much in need. So click on over to craft revolution @ etsy and or the red cross. Even penny helps!!

Ok on to Malaysian tofu curry!!

Ingredients:
2 boxes extra firm tofu -well drained
2 15oz. cans of UNsweetened coconut milk
2 teaspoons light brown sugar
Salt
1 tablespoon coriander
2 teaspoons curry powder
1/2 teaspoon turmeric
1/4 teaspoon cayenne
1 teaspoon taramind paste
2 large garlic cloves minced
1 tablespoon finely chopped ginger
4 roma tomatoes, seeded & diced
4 scallions, including the greens chopped
Juice of 1 lime

Drain, then dice the tofu into 1/2 inch cubes. Combine the coconut milk, sugar, 1/2 teaspoon salt, spices, tamarind paste, garlic, and ginger in a medium skillet. Boil for 1 minute then add the tofu. Lower the heat and simmer for 10 minutes. Add the tomatoes and the scallions and simmer for 10 minutes more. Add the lime juice & salt to taste.

Serve over rice, egg noodles or linguine.

YUM!

YUMMY! Thanks so much for posting this recipe, Leah! I've been craving something different that I can cook at home. I think this will do the trick. If I make it this weekend, I'll be sure to give a review.

Also, thanks for the craft charity info. It's unbelievable what everyone in that area has been through, and it's not even over. You're absolutely right, every penny helps.

Thanks for the recipe--it's going to be dinner this weekend! And I was really impressed by Craft Revolution, too. When I read the email this morning and went the Etsy shop, there was already a ton of stuff already up--I can't believe how quickly everyone acted!!
 
That recipe looks delish, one q though. Where did you find tamarind paste? I was looking for it a couple of weeks ago and had to settle with tamarind chutney, let me tell you not the same at all!
 
I'm glad to hear you guys are going to try it!! I'm going to be making Erin's sweet & sour tofu on Saturday so it will be a recipe swap weekend!!

Yahaira I got the tamarind paste at our farmers market. It is a huge world grocery type of place. I have also seen it in health food stores. If you really have trouble finding it I would gladly mail you some!! Just let me know!

I'm also really thrilled about how fast the crafting community has acted to help out! As of 8:30 pm the site had already raised $1,500.00 and had set a new goal of $5,000.

We're offering up a couple of tee shirts & I have a knit purse I have been meaning to take pictures of for etsy that I'm going to dontate as well.

At least it's easy to spend money when you know it's going to a good cause!
